Our hickory smoked mouth-watering BBQ is like no other. We cook our BBQ with low heat for 14 hours
until the moist, tender meat is literally falling off the bone.
Unlike many other caterers, we make out products from scratch and prepare them fresh daily from our commissary.
We use only hams to make our pork BBQ. Using hams provides our clients with a better quality product in that the BBQ has less
gristle and fat and more meat per serving.
We serve our BBQ with made-from-scratch sauces that my father, William (Red) Mathis, originated over 50 years ago. We offer
a red sauce characterized by its sweet, tangy taste along with our yellow sauce which has a zesty taste. We also have a Texas
hot sauce and a habanero sauce guaranteed to bring your body temperature up. All three sauces are provided with our service. In addition to our
pork BBQ, we also serve BBQ ribs, beef, chicken and hors d'oervres.
